Gaggia Classic modified with toggle switch to turn heater on/off during shot and a digital thermometer connected to the front panel showing the boiler temp. Also a Homemade ThermoFilter to monitor temps at the brew head while simulating a shot. Coffee puck simulator in ThermoFilter flows similar to a standard double espresso (about 2.25oz in 25 seconds) Target temp is 198-200F -- without the toggle to kick heater on, the shot might start at 199F but would start dropping immediately and would probably fall below 190F by the end of the shot. I deliberately went way beyond a normal shot and flowed about 4oz in 40 seconds so you can see that it is possible for the Gaggia boiler to hold a steady temp as long as the heat is cycled as the shot is running.
