300g cake flour 1 ½ tsp baking powder ½ tsp bicarbonate of soda Pinch salt 250g caster sugar Zest of ½ lemon 2 eggs, at room temperature 75g melted butter or oil 300g yoghurt 1 tsp vanilla extract 1. Preheat oven to 180C. 2. Prepare a 22cm non-stick cake tin by rubbing it with butter. 3. In a large bowl, sift the flour, baking powder, bicarbonate of soda and salt. 4. In another bowl, whisk the sugar with the lemon zest for a few seconds -- this will release all the oils from the zest. 5. Add the eggs and whisk for about 3-4 minutes with an electric beater, then whisk in the butter or oil. 6. Add the vanilla and yoghurt and stir until just mixed through -- do not over beat. 7. Pour batter into the cake tin and bake for about 30 -- 35 minutes or until a skewer comes out clean. 8. Allow to cool in the tin for 5 minutes before removing form the tin. 9. Serve dusted with icing sugar and a dollop of whipped cream.
